V Modern Italian, a concept from Fast Fine, opens this spring in The Gulch. It’s taking over the space previously occupied by Hi-Wire Brewing. The concept has numerous locations in other countries, but this marks the first location in the United States. Michelin-starred chef Stefano Ciotti crafts a modern take on classic Italian cuisine, while mixologist Federico Pollarolo curates an innovative cocktail menu. The space features murals by street art duo PichiAvo, depicting Venus, Victoria, Bacchus, and Mercury, symbolizing Italian heritage. V is the Roman numeral for five, symbolizing the five senses guests “feed” during an experience at V Modern Italian. Check back here for the latest details on location and opening date.
