Greenery Co. officially opened for dine-in on Monday, January 4, 2021, in Nashville’s Hillsboro Village. The healthy, fast-casual eatery is the creation of sisters and co-owners, Caroline Gaston and Whitney Abblitt. Customers can expect quick and no-fuss healthy meals made with locally-sourced ingredients. The restaurant offers free delivery to designated areas within Vanderbilt University Medical Center for medical professionals! Nashville Guru stopped by to get a look inside.
The 3,500-square-foot interior features two dining rooms with seating vignettes and tables crafted by local furniture designers Holler Design and Mesa Designs. The classic, Southern-charm-inspired decor was designed by local interior designer Sarah Bartholomew and local design studio Powell Architecture + Building. The space is filled with beautiful fabrics, gold and brass details, and hand-drawn illustrations.
Greenery Co. took over the space previously occupied by Provence Breads & Café. The hand-painted mural located at the restaurant’s entrance was painted by local artist Maggie Sanger. Free parking is available behind the restaurant and in allocated spaces on 21st Avenue South.
The menu at Greenery Co. was developed by culinary consultant Chef Barclay Stratton and features locally-sourced salads, bowls, and snacks. Standout menu items include the Music City Med Bowl (carrot falafel, quinoa, arugula, feta, kalamata olives, cucumber, cherry tomatoes, crispy chickpeas, za’atar with preserved lemon vinaigrette), the Tennessee Thai Salad (blackened shrimp, romaine, cherry tomatoes, green apple, shredded carrot, purple cabbage, fresh basil, crispy sesame rice with Thai cashew vinaigrette), and the French Onion Dip with house crackers.
