Two essential players at Butcher & Bee — Executive Chef Bryan Lee Weaver and Restauranteur Michael Shemtov — are opening Red Headed Stranger, a new taco spot and Texas-inspired eatery in East Nashville. The duo has been working together for two years at Butcher & Bee, leading to the creation of the concept. Development partners Elliott Kyle, Jamie Pfeffer and McClain Towery are also involved in the project.
The Southwestern menu will highlight Chef Weaver’s Texas upbringing, featuring items like breakfast tacos, brisket, Hatch green chilies, and homemade tortillas. The restaurant will focus on breakfast and lunch service, but there will also be a full bar and incubator-style test kitchens at night.
“Growing up in the Southwest, I’ve always had a love affair with the food,” recalls Weaver. “I’m excited to bring my Southwestern roots to Red Headed Stranger, where we’ll be offering unique breakfast and lunch options inspired by the flavors of my childhood. I look forward to being a part of the creative growth in Nashville’s Cleveland Park Neighborhood.”
The restaurant name, Red Headed Stranger, is a hat tip to Chef Weaver’s favorite Willie Nelson album.
