A Look Inside: 1 Kitchen

1 Kitchen is the new mission-driven restaurant at 1 Hotel Nashville. Their approach is simple: The closer things are to home, the better they taste. 1 Kitchen sources 75% of its ingredients within a 200-mile radius, and meat and seafood are always ethically sourced. They compost all green waste, and even have an on-site glass crusher.⁠ Nashville Guru stopped by to get a look inside the sustainability-focused concept.

The Interior

1 Kitchen’s earthy space is warm and welcoming with plants, candles, and natural light. Seating ranges from group tables to banquettes to two-top tables. There’s a spacious bar area right outside the main dining room, which is a popular destination during Golden Hour. When the weather permits, garage doors open to the exterior patio.

The Exterior

With its scaling greenery on the exterior, It’s easy to spot 1 Hotel Nashville. 1 Kitchen is located on the ground floor with an entrance on Demonbreun Street as well as from within the hotel. There’s a covered outdoor patio to enjoy on nice days.

The Menu

Helmed by Culinary Director and Top Chef alum Chris Crary, 1 Kitchen’s menu celebrates local purveyors with ingredient-driven, seasonal dishes. Menu highlights include the Charred Cauliflower, the Beet Wellington (Baker’s Garden beet, truffle, mushrooms, celery root puree, red wine sauce), and the Bear Creek Farm Beef Ribeye (crispy fingerling potatoes, grilled broccolini, 1 steak sauce). Weekend brunch offerings include options like Short Rib Hash and Waffle French Toast.

The beverage program is equally as thoughtful when it comes to reducing its carbon footprint. There’s a section devoted to Sustainable Cocktails like Lula’s Heart, which uses sustainable liquor (Diplomatico) and an avocado pit rather than an almond (as the latter requires high levels of irrigation to grow).
