EiO and The Hive is a new health-focused, fast-casual restaurant created by restauranteur and wellness entrepreneur Jennifer Masley. The all-organic eatery opens in The Nations area on Thursday, June 1, 2017. Guests can expect global flavors using locally-sourced and seasonal ingredients in a welcoming environment. EiO and The Hive has a warm, bohemian feel with mixed metals and natural woods throughout created by High Plains Drifter. There are a variety of seating options, from sofas to community tables to bar stools. Large wicker light fixtures hang overhead and a collage of artwork decorates the back wall. A small stage in the center of the room provides a platform for wellness guests, musical events, and TED-Inspired talks.
Local artist Ricky Wallace created eye-catching artwork on the exterior, giving guests a nice backdrop for photos. The large “EiO & The Hive” lettering on two sides of the building make the restaurant easy to spot.
Executive Chef Dale Levitski is spearheading the globally-inspired menu, which features comforting wellness foods. A few menu items include rotisserie chicken, a Millet Nori Roll, and an exclusive build-your-own bowl and broth option. There are several grab-and-go items, too, like glass-bottled juices, coffee, granola, prepared rotisserie chickens, and more.
The beverage program features cocktails mixed with freshly-squeezed juice, local draft beers, kombucha on tap, High Garden Tea, and Muletown Coffee.
EiO and The Hive sources the majority of ingredients from local suppliers and purveyors including Joyce Farms for chicken, Bells Bend Farms for beef, and Green Door Gourmet, Delvin Farms, Bloomsbury Farms, and local farmers’ markets for produce. The restaurant also utilizes a plot of land down the street, which has an organic farm, bee hive, and chicken coop.
