Bajo Sexto Opens in SoBro

Bajo Sexto officially opens in SoBro on Thursday, March 19, 2015 at 5pm. The casual taco joint, named after the sixth and largest bass guitar in a Mariachi band, is the newest restaurant from restauranteur and chef Jonathan Waxman, who also brought us Adele’s. Bajo Sexto is located in the Country Music Hall of Fame & Museum at 216 5th Avenue South. 

Bajo Sexto is an authentic Mexican taqueria inspired by Mexican street food. Oaxacan-born chef Kaelin Ulrich Trilling will take the reigns of the cuisine, which includes hand-made tortillas and chips, salsa made in-house, tacos, flautas, margaritas, wine on tap, beer and more. They will eventually make their own cheese, too. Trilling was born and raised in Mexico and is the son of Mexican food authority Susana Trilling, so the food will undoubtably be made to perfection. “Growing up in the Mexican countryside, in my mother’s cooking school, instilled a deep appreciation of food and a foundation for the right flavors and most important seasoning for each ingredient to shine,” says Trilling.  “My father was a farmer, and through his hard work, I learned to appreciate and develop a conscientiousness about the care and dedication it takes to grow vegetables, herbs and fruit, and bring fresh ingredients to the table.”

“We have a long-standing relationship with Susana and the Trilling family,” says Waxman.  “Kaelin brings a modern approach to authentic Mexican food, and I’m excited to work with and mentor this incredible young talent and budding superstar of Mexican cuisine.”

Bajo Sexto has two entrances, one on 5th Avenue and one in the museum. The main dining room seats 75 people. There’s also room for 12 at the bar and 75 on the outdoor patio when the weather is nice.

During their soft opening (March and early April), Bajo Sexto will be open Tuesday through Sunday from 5pm to midnight. Normal hours will eventually be Sunday through Thursday 10am to midnight, and Friday and Saturday from 10am to 3am. Late-night curbside pick-up will also be available on Friday and Saturday. Hours are subject to change, so call ahead.
